15 Coconut Recipes You’ll Go Nuts For (2024)

15 Coconut Recipes You’ll Go Nuts For (1)

Are you as crazy for coconut as I am?

I eat or drink coconut every single day in some form or another.

Not only do I love the tropical, sweet flavor, I also know that coconut is one of the best foods you can eat.

It can do all of these amazing things for your body:

  • Stave off infection due to 3 fatty acids that are antimicrobial and disinfectant
  • Alkalize your body because coconut is low in sugar and high in vitamins C, E, B1, B3, B5 and B6 and minerals iron, selenium, sodium, calcium, magnesium, and phosphorous, making it one of the most alkaline ingredients on earth.
  • Keep your brain sharp and even have a therapeutic effect on brain disorders like Alzheimer’s.
  • Help prevent heart disease according to research showing a correlation between populations that eat a lot of coconut oil and healthy cardiovascular systems.
  • Increase your energy levels due to its medium chain triglycerides (MCT), an energizing healthy fat.
  • Prevent fungal and bacterial infections thanks to lauric acid, which can even kill Staph and yeast!
  • Slow the aging process thanks to antioxidants that will keep your hair and skin looking youthful and glowing.
  • Improve digestion by lining the stomach and intestines with healthy, inflammation-reducing fats.

Coconut is also impressively healthy for what it is not. Substituting coconut oil for butter or vegetable oils, or substituting coconut milk for cow’s milk, provides you with an anti-inflammatory, alkaline alternative that will not clog up your digestive system or deplete your body of minerals or healthy fats.

So the more coconut you can add to your diet – as coconut meat, oil, milk, and water – the better for your health and the better for your taste buds!

Let’s get started with 15 recipes for morning, noon, and night that will have you crazy for coconut!

Breakfast

SUMMERY COCO LOCO SMOOTHIE

15 Coconut Recipes You’ll Go Nuts For (2)

One of my favorite ways to enjoy coconut is by adding it to my morning smoothies. Just about any smoothie will taste better (and be more filling) with the addition of coconut milk, water, and/or oil.

This smoothie recipe packs a coconut punch with 3 coconut ingredients in it, including meat from the coconut. If you’ve never worked with a coconut before, don’t be intimidated. You’ll pick it up in no time.

GOLDEN COCONUT MYLK (AKA. ALKALINE CHAI)

This soothing, hot tonic is a wonderful alkaline replacement for morning coffee. It tastes a bit like a chai latte but better because it has delicious spices, both for flavor and for health. It gives you a serving of healthy fat in coconut milk to jump-start your morning right with energy, a clear mind, a boost to your mood, and along with an alkaline breakfast, a full tummy until lunchtime.

The primary health ingredient, turmeric, is anti-inflammatory, anti-bacterial, anti-fungal, and highly alkalizing. The combination of the turmeric with ginger and black pepper is very powerful – energizing and detoxifying, fighting inflammation, and slashing cravings for sugar.

SPICED QUINOA POWER BREAKFAST

15 Coconut Recipes You’ll Go Nuts For (3)

This is an awesome breakfast recipe for refueling your body to face the day. It combines nuts, seeds, and berries with quinoa that has been cooked with coconut milk instead of water, plus an aromatic blend of spices.

Just be sure to choose coconut milk as the plant-based milk you use to make the quinoa with, and top with extra coconut flakes!

AVOCADO BANANA SMOOTHIE

This delicious smoothie has 4 of my favorite sources of healthy fat: coconut oil, coconut milk, avocado, and Alkamind Organic Daily Protein Powder.

We combine that with spinach, avocado, banana, and lime juice for a tropical treat you are sure to love. I like the Vanilla Coconut Organic Daily Protein flavor in this smoothie to up the coconut (and protein!) factor.

Lunch & Dinner

EASY WEEKNIGHT COCONUT CURRY

15 Coconut Recipes You’ll Go Nuts For (4)

It doesn’t have to be difficult or time-consuming to cook tasty and nutritious dishes that take less time to prepare than it takes to order take out. One thing I love about this simple recipe is how versatile it is. If you have different veggies on hand, throw those in instead and no matter what you try, you’re going to end up with a delicious coconutty dinner in a matter of minutes.

COCONUT CHIA SALAD DRESSING

The ingredients in this dressing and the simple salad that goes with it are a perfect example of how you can use coconut to get more clean, keto fats in your diet. Plus, this easy dressing is delicious. I usually double the recipe and save some for another salad in the next few days. If you’re a coconut fan, you’re going to want to make extra too.

STIR-FRY WITH COCONUT LIME QUINOA

15 Coconut Recipes You’ll Go Nuts For (5)

I’m willing to bet I’m not the only one who wants to eat like this all summer long. When it’s hot outside, I don’t want to stand over the hot stove unless it’s for a quick and delicious stir-fry of light yet filling alkaline veggies with tangy and tropical lime coconut flavor.

Other than the quinoa, which you can make in a big batch in advance for lunches and dinners throughout the week, this takes about 15 minutes all in, and you’re ready for a satisfying, nutrient-packed dinner.

CURRIED CARROT SOUP

This is a delicious recipe that utilizes turmeric in 2 forms – in a powder on its own and in curry powder – along with both of its most powerful allies, coconut oil for healthy fat and black pepper for potency. Together, they’ll boost the absorption of the turmeric by several thousand times. Along with the ginger, this soup is packed with yummy flavor and powerful detoxifiers.

Snacks

LEMON COCO BOMBS

15 Coconut Recipes You’ll Go Nuts For (6)

If you like coconut and lemon, you’re going to love this easy treat that helps keep you full and get you through the mid-afternoon slump that often leads to sugar, carbs, and a whole lot of empty calories. This alternative utilizes coconut as coconut flour, oil, shredded meat, and a scoop of Vanilla Coconut Organic Daily Protein for a serious coco-bomb.

This tasty snack recipe drizzles warmed coconut butter on top of apple slices and the sprinkles them with cinnamon. Yum! It’s a snack your kids will ask for again and again – or you’ll want yourself. If you can’t find coconut butter, you can substitute coconut oil.

ACID-KICKING COFFEE SMOOTHIE

This recipe is like a Frappuccino that’s actually good for you! Enjoy this refreshing coffee drink mid-morning to power through your day or as an afternoon pick-me-up. Coffee itself is highly acidic, but you can go a long way toward minimizing the acid and supplying your body with lots of nutrients when you combine it with the right ingredients, like the alkalizing choices in this coconut-rich smoothie.

Desserts

THE ORIGINAL VANILLA COCONUT CHIA PUDDING

This is my favorite dessert of all time. I always joke that we’d better make extra because it won’t last. Chia was used for energy and strength by Mayan and Aztec civilizations, as it’s 50% omega-3s—one of the richest sources of these fatty acids and protein. It’s also high in fiber, which helps reduce inflammation in the gut and lowers cholesterol.

This chia pudding combines coconut flakes, water, and oil for a tropically delicious taste sensation.

COCONUT CREAM DESSERT TOPPER

15 Coconut Recipes You’ll Go Nuts For (8)

Use this whipped topping to make any alkaline dessert sweeter. It’s so creamy and flavorful, you won’t even miss the acidic dairy version. And best of all, you can choose either the vanilla-coconut or chocolate version – both are included in this recipe. Once you know how to make this, you’ll find yourself coming up with all kinds of ways to use it deliciously – including eating it with a spoon!

CLEAN KETO COCONUT OIL FAT BOMBS

Coconut oil is right up there with avocados as my favorite sources of healthy fat, and is a great snack for anyone trying to get off their sugar, and move to a healthier lifestyle, where you are burning fat for fuel. These bite-size bombs are the perfect treat to get a quick hit of the medium-chain triglycerides (MCT) your body needs for optimal performance. Plus, they give you long-lasting energy and taste like the tropics.

COCO BANANA FRO-YO

This frozen banana coconut smoothie is easy to make, super-delicious, and a great healthy way to satisfy any sweet cravings after dinner! Feel free to experiment with the ingredients because there is no way to make this not delicious. You could add cacao, cinnamon, vanilla, or even other fruits for tasty variations on this treat.
