I'm in France and we can find this spice here. Googling, it's more or less: 1 teaspoon ground cumin1 teaspoon ground ginger1 teaspoon salt3/4 teaspoon freshly ground black pepper1/2 teaspoon ground cinnamon1/2 teaspoon ground coriander seeds1/2 teaspoon cayenne1/2 teaspoon ground allspice1/4 teaspoon ground cloves

I made a vegan version of this recipe last night. Added a sweet potato, peas, a grated carrot and a bit more salt and parsley than in the original recipe. I used vegan eggroll wrappers are placed the mixture in the middle of the square then folded (to keep the ingredients in the wrapper better). Then, I baked these for about 15 minutes. I served them with Greek yogurt mixed with a little sriracha. This are perfect for a quick lunch, post-run/workout snack, or for roadtrips.

I use my own ras el hanout blend at home, similar to what my mother Moroccan uses. NYT should provide more context on the spice blends—there’s no correct recipe. It generally varies based upon family preference, and I tweak it based upon the meat I’m using. I’ll incorporate cinnamon if I’m making chicken, beef or lamb. I’ll use more ginger for beef. I’ll lean more heavily on coriander if I’m preparing fish. High quality black pepper is always a must. Good turmeric and paprika are not uncommon.

I made this today using spring roll wrappers per the recipe. Big mistake. Too flimsy. Didn’t like frying. Next time I do this I will use egg roll wrappers. They are called Tunisian egg rolls after all.

are you sure you mean are spring roll wrappers (rice flour, usually not cooked) or egg-roll/won ton wrappers (wheat, usually fried)?

I have purchased “spring roll wrappers” that are wheat-based, such as those made by TY, which are very common in my area. I think it depends on the company. Some “egg roll wrappers” are very thick, and I don’t find they cook properly if there are multiple layers, such as the corners.

I've never heard of mozzarella included in these ... might leave out or substitute with cream cheese which I have had in these. Would also added shredded carrot / peas. You can pretty much do whatever you want with these as far as ingredients, as the description says. Those who make samosas sometimes see these as just finger-shaped samosas.

Ras el hanout is a arabic seasoning

It's a mixture of spices used in Morocco and North Africa. It has black pepper, ground ginger, coriander seeds, cumin, mace, allspice, tumeric, cinnamon, ground cardamon and whatever the shop keeper likes to add. The name means "top of the shop" and I think denotes the best quality spices. Typically you can buy it ground. Try Penzeys or Amazon? It's nice!
