1 Min Microwave Eggless Cookie

I have been getting mails from my viewers to post more microwave baking recipes. I too love baking in microwave, since it is so easy to make and only takes less time to dig into the goodies. Actually i have few microwave cake recipes in my blog like chocolate cherry cake, eggless chocolate cake, eggless fruit cake and one of my popular post nutella mug cake.

So far i have tried only baking cakes in my microwave, couple days back i decided to try out cookies in microwave. When i searched google i landed on this amazing website nikskitchen. So had many easy microwave friendly recipe. Love it so much. I took this cookie recipe from her blog and made it. It was a huge success.

I modified the recipe as per my taste and available of ingredients, still it was a hit. I added a little more cocoa powder and also some chocolate chips. This recipe makes 2 cookies, made one plain chocolate and one chocolate chip cookie. I loved the chocolate chip ones a lot. Please try this and let me know how it turn out for you.

Ingredients for Microwave Cookie Recipe

  • All Purpose Flour / Maida - 2 tbsp minus 1 tsp
  • Cocoa Powder - 1.5 tsp
  • Unsalted Butter - 1 tbsp melted
  • Powdered Sugar - 2 tbsp (granulated sugar powdered)
  • Milk - 2 tsp
  • Chocolate Chips or Nuts - 1 tbsp for topping (optional)

How to make 1 Min Microwave Eggless Cookie Recipe

  1. In a mixing bowl add all the ingredients and mix well to form a dough. Divide into two equal portions.
  2. Take a ramekin bowl or any microwave safe bowl, grease it slightly with some butter.
  3. Presss on ball in to the bowl and flatten it. Now microwave them for a min.
  4. Remove it let it cool for couple of mins and invert them to a plate.
  5. You can add chocolate chips on top of them before baking too.

Ingredients

  • 2 tbsp minus 1 tsp All Purpose Flour / Maida
  • 1.5 tsp Cocoa Powder
  • 1 tbsp melted Unsalted Butter
  • 2 tbsp Powdered Sugar granulated sugar powdered
  • 2 tsp Milk
  • 1 tbsp for topping Chocolate Chips or Nuts optional

Instructions

  • In a mixing bowl add all the ingredients and mix well to form a dough. Divide into two equal portions.

  • Take a ramekin bowl or any microwave safe bowl, grease it slightly with some butter. Presss on ball in to the bowl and flatten it. Now microwave them for a min.

  • Remove it let it cool for couple of mins and invert them to a plate.

  • You can add chocolate chips on top of them before baking too.

Notes

1)This cookie should be baked in a mug or cup, not in a plate.
2)You can add any topping as you like, some ideas are nuts, chocolate and dried fruits.
3)You can add some vanilla essence too.
4)The cookie will remain soft when you remove it from oven, it gets hard when they get cold. So never bake them more than 1 min.
5)My microwave has a power of 800 watts.
6)My Ramekin Size isDiameter: 3.7 inches (9 cm), Height: 2 inches (5 cm)
7)This cookies should be baked in normal micro mode, not in convection mode

    I used exactly same measurements but the mixture was wet enough. So I added around 3 tsp more maida to make dough out of it. The cookies got baked but now after cooling, they have become hard. Could you tell me what could be the issue?

    @AnonymousYou should not add too much flour, just bake it as it is it will give you good results.

    Where did u get the ramekins in nagercoil? I don't have any ramekins but would like to bake it. Can you say what can I substitute in the place of ramekins to bake the cookies?

    Hi Aarthi,

    your recipe seemed rreally good and simple so i tried it. i'm not muh of a baker but have started off late and have 2 limitations, i cant bake with egg and i only have a microwave.
    Anyway so that attracted me to your recipe for this festive season, so i put together the ingredients as per the recipe but the dough wouldnt hold, it was like a thicker cake batter consistency so i added more maida (dont know exact amount, just kept adding till i got the dough consistency as per your pix). And then i baked them, but :
    a. some of them got burnt slightly
    b. all of them gott really hard after cooling and are inedible πŸ™

    Please guide me n how to get the right crumbly cookie texture.

    And i must say great job for sharing these innovative recipes. (esp for someone like me who is a not much into cooking and baking) Thanks !

    @AnonymousI think u must have added too much butter or milk so it has got wet. Use just the exact amount and it will work.

    The reason for it getting burnt may me because of the combination of milk, sugar and butter in which you have to be judicious if your batter does not come out as per the consistency shown in the picture. The best is to follow the dry ingredients and wet ingredients procedure.
    Sieve the powdered sugar,add the melted butter and milk in the bowl. Similarly,in another, sieve the other dry ingredients like the flour, cocoa in another.
    Then gradually add the wet mixture to the powders and prepare the dough to get the required consistency before making it into to the cookie. Adjustments can be made here by lessening wetness by retaining the last few drops of the wet mix in the 1st bowl or adding a shake of flour to increase dryness.

    If you want it crispy, microwave it again for 20 seconds after the initial 1 min and resting time.

    I used flour and powdered sugar as normal, added 1 tsp of vanilla maizena, 1 tbsp of vanilla and 2 1/2 tbsp of honey coffee creamer and did the rest as usual. I let the dough stay a little sticky and my cookies came out delicious!!! Topped with a little whipped cream or dip in coffee!

    Tried this today. The first one got burnt in the center after 1min in microwave. Smoke was coming out from microwave oven. And I couldn’t really remove it from the mug. The 2nd one was still soft after 1min in microwave so I microwaved it a little longer. Was soft and I did it a little longer. Center part still gets stuck to the bowl. Any idea? Issit over or under greasing OR due to timing? Same mix for both cookies. Btw thanks for this recipe.
